Pancake muffins are a convenient and complete breakfast! Your kids will love this fun way to eat pancakes and sausage.
I love pancakes and sausage. Sometimes, however, I don’t have the time to make them in the morning. These fun pancake muffins are the perfect quick grab breakfast.
You simply make them ahead of time and store them in the freezer or refrigerator. When you want one, just heat it up. It doesn’t get any easier.
These little muffins are full of pancake, maple syrup and sausage flavors. A complete meal is packed in the form of a tiny muffin.
I love that I can give my daughter a few of these in the car whenever we are in a hurry. They are so convenient and so delicious.
Pancake Muffins Recipe
Ingredients:
- 1 package of sausage links
- 1 egg
- 1 cup flour
- 3/4 cup milk
- 2 Tbsp. melted butter
- 2 tsp baking powder
- 1/4 tsp. salt
- 1/2 cup maple syrup
- Mini muffin cups
Instructions:
- Cook sausage according to package instructions. Set aside.
- Beat egg and add milk, melted butter and syrup.
- Combine dry ingredients and add to the wet ingredients. Stir to combine thoroughly.
- Fill mini muffin cups 3/4 full.
- Cut sausage links into thirds.
- Insert a piece into each batter filled muffin cup.
- Bake at 350 for 12-15 minutes.
If you really love syrup, you can top the muffins with extra. However, there is enough syrup in the batter to give the muffins a great flavor.
Also, you can easily make larger muffins. I recently purchased a mini muffin pan and I’m obsessed with it. There is something so fun about making miniature muffins and cupcakes.
If you make larger muffins, increase the baking time to allow for the batter to cook through.
