I love creme brulee. It is one of my favorite desserts. Between the caramelized sugar and delicious custard, it is the epitome of all things sweet.
I came up with a way to combine my favorite no bake cheesecake recipe and creme brulee to create the ultimate summer treat. You’ll love this recipe because you don’t have to turn on your oven, microwave or stove. Isn’t that great?
All you need is a mixer and a creme brulee torch. It is that simple.
Now, you will notice that these cheesecakes look just like classic creme brulee. I thought it would be fun to plate and serve these little no bake cheesecakes like creme brulee.
However, you could easily make one big dish of this dessert. It’s totally up to you.
No Bake Creme Creme Brulee Cheesecake
Ingredients:
- 2 blocks of cream cheese (room temperature)
- 1/4 cup of powdered sugar
- 3/4 can of sweetened condensed milk
- 1 1/2 tsp. vanilla bean paste (you could also use extract)
- Sugar to create the topping
Instructions:
- Put the cream cheese in a mixing bowl.
- Beat until fluffy.
- Add the powdered sugar and continue beating.
- Slowly add the sweetened condensed milk
- Add the vanilla extract.
- Continue beating until fluffy and incorporated.
- Spoon the batter into ramekins.
- Allow to set in the refrigerator for 1-2 hours.
- When ready to serve, top each ramekin with 1 tsp. sugar.
- Using a torch, caramelize the sugar.
Allow the sugar layer to cool before serving…I found out the hard way. Trust me, you are better off waiting a few minutes.

- Add the vanilla extract.
- Continue beating until fluffy and incorporated.
- Spoon the batter into ramekins.

- When ready to serve, top each ramekin with 1 tsp. sugar.
- Using a torch, caramelize the sugar.
