Did you know that you can make delicious brownies in the microwave? Yes, it is true. You can whip up a batch of completely decadent brownies in under 10 minutes.
These brownies are so chewy and delicious. Your family will love them.
Don’t worry, the espresso flavor isn’t overwhelming. It is just enough to elevate the flavor of the chocolate. If you don’t have any espresso, you could substitute black coffee.
Double Chocolate Espresso Microwave Brownies
Ingredients:
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/4 tsp. salt
- 3/4 tsp. vanilla
- 2 eggs
- 2 Tbsp. espresso
- 1/2 cup melted butter
- 3/4 cup flour
- 1/2 cup cocoa
- 1 & 1/2 cups mini chocolate chips
- 1/4 tsp. baking powder
Instructions:
- Beat sugars, salt, vanilla and eggs until combined.
- Add melted butter. Mix until incorporated.
- In another bowl, mix flour, baking powder and cocoa.
- Add the flour mixture to the wet ingredients.
- Mix until combined.
- Add 1/2 cup of mini chips to the batter. Stir to incorporate.
- Grease an 8 inch glass dish
- Pour the batter into the dish.
- Microwave on high for 5-6 minutes.
- Remove from the microwave and pour 1 cup of mini chips on top of the hot brownies.
- Once melted, spread over the top of the brownies.
In my opinion, these brownies are best served slightly warmed in the microwave. I just heat one up for about 10-15 seconds. However, they are totally delicious whether you heat them or eat them at room temperature.
