I really, really love pizza. If I had my way, I could probably eat it every single day. I know I’m not alone in this sentiment. However, I dont love all of the calories in pizza. To create a healthier version, that my 3-year-old would also eat, I decided to use zucchini.
I chose zucchini because my whole family loves fried zucchini. I figured if they can eat it fried, they can certainly try it baked. If you have family members who aren’t crazy about vegetables, definitely give this healthy zucchini pizza recipe a try. You almost cant taste the zucchini.
This healthy zucchini pizza recipe is really great and can be assembled in a very short amount of time. It only requires a few ingredients and is so easy to prepare. Since I used a small zucchini, these are more like pizza coins, which would make a great appetizer or snack.
Not only is this healthy zucchini pizza recipe fun to make with your kids, it is a great way to get them to eat their vegetables.
Another trick I use to make the pizza even more healthy, is to blend spinach into the pizza sauce. My husband, who hates spinach, will eat it mixed in with the pizza sauce.
I have found that pizza sauce is a great medium in which to hide a wide variety of vegetables.
Healthy Zucchini Pizza Recipe
Ingredients:
- 1 zucchini
- cooking spray
- low-fat cheese
- pizza sauce
- toppings of your choice
Instructions:
- Preheat your toaster oven to 375.
- Line a metal cooking tray with tinfoil.
- Spray the tray with cooking spray.
- Cut the zucchini into slices about 1/4 inch thick.
- Place the slices onto the coated tray.
- Top with pizza sauce, cheese and your toppings.
- Cook for 20-25 minutes.
