Chocolate Peanut Butter Zucchini Cookies

There isn’t a better combination in the world than chocolate and peanut butter. In my opinion, there is nothing better than a chocolate and peanut butter cookie. Well, maybe a chocolate, peanut butter and oatmeal cookie (those are truly my favorite).

When I decided to make cookies, I opened the fridge to start gathering the ingredients. As I was searching through the shelves, I found a zucchini. My daughter and I have been eating a lot of zucchini lately. We really love it. (If you love zucchini, check out this healthy zucchini pizza recipe.) I decided to use the zucchini in a batch of chocolate peanut butter oatmeal cookies.

I could have added zucchini to a plain chocolate and peanut butter cookie. However, the oats do a great job of hiding the texture of the zucchini and they add fiber. (I have to hide the texture because my husband is not a zucchini fan).

In this recipe, it is important to very finely shred the zucchini before mixing it into the cookie dough. I did this by using the smallest holes on my grater.

I love these cookies because they are very dense and full of flavor. My whole family really enjoyed them and couldn’t even taste the zucchini.

Recipe For Chocolate Peanut Butter Zucchini Cookies

Ingredients:

  • 1/2 cup margarine
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 cup cocoa
  • 2&1/2 cup oats
  • 3/4 cup zucchini

Instructions:

-Preheat oven to 350.
-Shred a zucchini until you have 3/4 cup (set aside).
-In a mixer, combine the margarine and peanut butter until incorporated.
-Add the sugars and mix until combined.
-Add the egg and vanilla and beat for 2 minutes.
-Add the flour, baking soda and cocoa until thoroughly incorporated.
-Add the zucchini and mix.
-Add the oats and mix until combined (the dough will be very dense).
-Bake at 350 for 10-12 minutes.

These cookies taste great and are packed with zucchini. I hope your family loves them!
