As a Mom, I like my school mornings to run as smoothly as possible. To do this, I like to get everything prepped and ready the night before. Breakfast is no exception. I love having healthy breakfast options that can be prepared ahead of time.
Breakfast taco cups are an easy way to give your family a protein packed flavorful meal. I love these cups because they take all of the flavors of breakfast tacos and put them inside wonton wrappers.
It is super convenient that you can eat these in the kitchen or on your way out the door. Since they are a self contained breakfast, it is easy to eat them on the run.
When I decided to whip up a batch of breakfast taco cups, I headed to my local Randalls to pick up all of my ingredients. I decided to purchase a jar of Pace Salsa to add a kick of flavor to my recipe.
I easily located the Pace products in the lunch & dinner section of the store. I was impressed with the variety of flavors. I decided to purchase the Pace Chunky Salsa. I figured it would pair great with my breakfast taco cups.
I love Pace Salsa because it can be used in so many different ways. After I use it in my breakfast tacos, I can add it to a wrap at lunchtime or use it as a topping for my burger at dinner.
Breakfast Taco Cups Recipe
Ingredients:
- 8 eggs
- 1/3 cup milk
- 24 wonton wrappers
- 10 pieces of bacon or ham (roughly chopped)
- 1 cup of cheddar cheese
- Cooking spray
- 1/2 cup Pace Chunky Salsa
Instructions:
Preheat oven to 375.
Use the cooking spray to coat a muffin pan.
Take two wonton wrappers and place them overlapping inside each muffin opening.
In a bowl, whisk together eggs and milk until incorporated.
Add a 1/2 cup of the cheese, the bacon and Pace Salsa. Stir to combine.
Fill each wonton cup with the egg mixture. Top with the remaining 1/2 cup of cheddar cheese.
Bake for 20-25 minutes.
Once cooled, top with additional Pace Salsa.
These breakfast taco cups taste amazing. I love that the Pace Salsa really kicks up the flavor of the cheesy bacon eggs. Your family will love starting the day with this fun breakfast option.
