I love eggplant dip. You can serve it with pieces of pita bread or pita chips. It is a delicious, healthy snack.

Eggplant Dip Recipe
1 eggplant
1Tbsp garlic salt
1 tsp lemon juice
1/4 cup light sour cream
1/8 tsp chili powder
Broil eggplant whole for 25 minutes, rotating to ensure the skin is broiled evenly around it. Remove eggplant from broiler and peel off skin. Combine eggplant, garlic salt, lemon juice, sour cream and chili powder in a food processor. Blend until creamy. Serve eggplant dip with pita chips.
